A DAY IN THE LIFE OF A SOUS CHEF

As a Sous Chef, you supervise our university culinary staff in preparing, cooking, and presenting a variety of foods. To keep our kitchen operating smoothly, you meet with kitchen supervisors and discuss daily menus along with issues that need attention. This includes developing menus, completing production sheets, and verifying supply needs and availability. You assume 100% responsibility for the quality of products served.

You enjoy cooking food in accordance with both Nutritional Services and Health Department standards. Whether you're using broilers, ovens, fryers, grills, or other kitchen equipment, you keep sanitation in mind. Using your exceptional management skills, you help with supervising and training our food service team and assign food preparation tasks as needed. It brings you great satisfaction to know you excel at doing what you love, which is why you're perfect as our Sous Chef!


QUALIFICATIONS FOR A SOUS CHEF

Minimum Requirements

  • Must have a high school diploma or GED equivalent.
  • Must have or obtain a Municipality of Anchorage food handler's card or ServSafe certification contingent upon 30 days of hire.
  • Must have three (3) years of related work experience.
  • Must be able to work independently and complete assignments in a timely manner.
  • Must have knowledge and training in using a variety of food production equipment.
  • A valid driver's license and an acceptable driving record for the past three (3) years to be eligible under NMS' vehicle insurance policy
  • Contract requires employees to speak, understand, read, and write English.

Working Conditions and Physical Requirements

Weather: Indoors: environmentally controlled; requires most or all work to be done inside.

Noise level: Moderate

Description of environment: This is an industrial kitchen/cafeteria environment located on a university campus setting.

Physical requirements: Employee is required to lift and/or move up to 50 lbs. Frequently required to sit, stand, walk, use hands/fingers to handle or feel, climb, stoop, kneel, crouch or crawl, talk/hear, see, taste/smell, and carry weight/lift.

Travel: None
